Origin

Ayat Knife Co. started the way most things worth doing start: obsessively, in a garage, nights and weekends, figuring it out as we went — quite literally, trial by fire.

Every blade that we make is designed and built by hand. It's a human touch so that we can create something meaningful, custom, and that will last for generations.

Philosophy

A knife is a tool, but a well-made knife is an object you want to hold even when there's nothing to cut. That tension — between utility and art — is what drives every decision made here.

Steel selection, grind geometry, handle material, fit and finish — none of it is arbitrary. Each choice compounds into something that either has character or doesn't. The goal is always character.

The Work

The current production line represents the first formal run — five patterns sent through waterjet, built out one at a time with hand-ground bevels, heat treat, and fitted handles.

Commissions are open. If you have something specific in mind — a profile, a use case, a material — reach out. The best knives made here have been for people who knew exactly what they wanted.
